Potatoes keep well enough as harvested that drying seems like a lot of unnecessary work unless you want light weight travel food, or are planning against famine-level crop losses.
OTOH, I'm familiar with ~half a dozen kinds of potatoes. A culture that has hundreds of kinds of potatoes may well have dozens of types selected for ease of drying & very long term storage.
